Strawberry mojitos and summer fresh forever!

This cocktail is completely geared for all things summer; poolside tanning, backyard reading, afternoon BBQing, you name it!  Yesterday afternoon, I got home from work a bit early and it was hot, like really.  So I decided to grab a book and read in the shade in my backyard.  Is that summer living or what?!  But of course, reading in the backyard on a warm summer day can’t be done empty handed.  Of course.  So this cocktail was born.

That’s a lie.  This cocktail was born years ago.  This mojito happened to be the signature cocktail at my wedding, so my love for it has been long standing!  It’s actually probably my second favorite drink, next to a Mai Tai.  Which I’m still trying to figure out how to make low cal!  Trying.  Failing.  And will definitely update you when I figure it out!  But this Strawberry Mojito? Easily made low cal.

So here’s the break down!  First this post is NOT sponsored by Torani.  I just happen to use and love the sugar free syrups.  I always keep quite a few flavors on hand.  I buy mine at my local restaurant supply store, but even easier you can buy these syrups here.  You’ve probably noticed I referenced Torani Syrups in other posts like the Mango Margaritas and Salted Caramel Smoothie, so my love of Torani is not news to you! :)

For this recipe I used the Sugar Free Peppermint and the Sugar Free Strawberry.

So here’s the plan.  Stop what you’re doing.  Leave work.  Make this drink.  Grab a book, and get your summer loving butt outside while you still can!  Soon enough, fall will be here in all it’s scarf-y, boots-y, butternut squash-y glory.  So for now, relish in the sunshine!

Strawberry Mojito

Serves: 1
Ingredients
  • 1 dash sugar free strawberry syrup
  • 1 dash sugar free peppermint syrup
  • A few sprigs fresh mint
  • 1 shot white rum
  • 8 oz seltzer, sparkling or soda water
Instructions
  1. In a glass muddle mint with syrups
  2. Add white rum and soda water
  3. Top with ice.
  4. Enjoy responsibly!
Notes
If you don't have the torani syrups, you can use simple syrup for a few extra calories, or liquid stevia works great as well! In a pinch, diet sprite works for both sweetness and the seltzer water.
