Are you ready for some…. Taco Dip?!

You thought I was going to say Football didn’t you?  How about- Are you ready for a perfect recipe for Monday Night Football?

Better?  Awesome!

It’s Monday which is usually no fun, but you know I love any reason to celebrate and Monday Night Football is no different!  And tonight, we’re celebrating with a skinny taco dip recipe.  But the good news, no one will have any idea it’s skinny, so no need to tell the boys.  It’ll be our little secret.

So as you know we just moved to Denver and we’re having a ton of fun watching the local sports.  Living in Southern California, while we did have baseball, we couldn’t watch the games on TV and getting to Dodgers stadium takes longer than the game itself, so that was a NO.  We love hockey, and my husband is still in insisting on staying a Kings fan, fair enough.  And we had no football.  Since we’ve been here we’ve gone to 4 Rockies games, you may have seen on Instagram.  And have many plans for Avs and Broncos games!  So excited!!

Tonight we’re only having one couple over and I wanted to make a few appetizers, so I made a small batch of this recipe.  The good news, it is VERY easily multiplied by how many people you are having.  The below recipe is for 4 people.

I served these with baked tortilla chips, which for 8 is only 60 calories.

Skinny Taco DIp

Serves: 4
  • 1 medium avocado
  • 1 Tbls lime juice- about half a lime
  • 1 tsp garlic powder
  • ½ tsp each salt and pepper
  • 1 cup 0% Greek yogurt
  • 2 Tbls taco seasoning- I used Trader Joe's
  • ¼ light shredded cheddar cheese
  • 1 tomato- chopped
  • 2 Tbls sliced black olives
  1. Mash avocado with lime juice, garlic and salt and pepper
  2. Spread in the bottom of a serving bowl
  3. Mix greek yogurt with taco seasoning
  4. Spread on top of avocado
  5. Top with shredded cheese, then sliced olives and tomatoes
Don't have taco seasoning? Make this!
1 Tbls chili powder
1/2 tsp garlic powder, onion powder, black pepper, cumin
A pinch of cayenne
