Roasted Mini Portobellos Stuffed with Green Bean Casserole and Crispy Onions

Phew!  That title is a mouh full!  You guys, this recipe is a take on the traditional green bean casserole and one of my favorite things, stuffed mushrooms! mmmm  My family did not grow up eating green bean casserole, I think my mom thought it was too fattening, which, really, it is.  This is a great lightened up version of your favorite casserole.

Ingredients
  • 12 mini portobellos- about 3-4 inches
  • 1 Tbls butter
  • 2 cups green beans, chopped into half inch or so pieces
  • ½ cup cream sauce
  • 1 onion, finely sliced
  • ¼ cup flour
  • oil for frying
Instructions
  1. Preheat oven to 375*
  2. Roast portobellos for approx 20 minutes until nice and brown
  3. In the meantime, Saute diced green beans in butter for 8-10 minutes, until just starting to brown
  4. Add cream sauce to pan and cook for another 2-3 minutes
  5. In a bowl toss onions slices into flour to coat thoroughly
  6. Add about ½ inch of oil to the bottom of a sauce pan and turn heat to med-high
  7. Once heated, add 1 coated onion to oil and it should sizzle immediately (this is how you know the oil is ready!)
  8. Once ready, gently sprinkle in onions, and gently move around with a spoon so they don't stick together
  9. Once nice and golden brown, remove from oil and let drain on paper towels, sprinkle with a bit of salt while still hot
  10. Scoop a good spoonful of green bean mix into empty portobellos
  11. If you plan to serve right away, top with onions and put back in oven for another 10 minutes.
  12. If you are going to let them sit for a bit, don't top with onions until ready to bake and serve, or the onions will get soggy.
