Quick Pepperoni Pizza

pepperoni pizzaSo you know those nights, that you’re sitting at home, hitting the “watch next episode” button on hulu, and immediately think.  Pizza.

Ok, I KNOW this one is not just me!  Earlier in the week, the hubs was working late, I was catching up on super important things like hulu and had a very hot date with a glass/bottle of wine and those pizza thoughts started drifting into my head.  But there’s 2 problems.

  1. Calories.  and then more calories.  No way around it, pizza ain’t good for you.
  2. 30 minutes for delivery?!  but. I’m. hungry. NOW!  At that moment, 30 minutes seemed really far

So I went into the kitchen during one of the 90 second commercial breaks and threw together this pizza, which was happily completed by the next commercial break.  It was perfect!  And the best part, only 170 calories.

cut pizza170 calories in pizza.  300 calories in wine.  That’s totally healthy and balanced.  Right.  This pizza is so guilt free it even makes a six hour hulu sess seem guilt free.  Bob and Jillian would be so proud (yes I was watching the biggest loser when a pizza craving hit, the irony is not lost on me)

The recipe starts with the quick marinara.

Quick Marinara
 
Serves: 1
Ingredients
  • ½ tomato
  • dash of olive oil
  • dash of balsamic vinegar
  • pinch of garlic powder, Italian seasonings, salt and pepper
Instructions
  1. Add all ingredients to blender
  2. Blend until smooth

Now that you have your quick marinara, assembly of this pizza is a snap.

First, have you seen these tortillas?  They’re amazing!  60 calories with protein and fiber.  They also don’t have that cardboard-y flavor wheat tortillas have.  A tip, my Vons carries them in a basket right in front of the deli counter, not with the other tortillas.  So you may have to hunt a bit, but they’re worth it!chia wrapsTake one tortilla, spread evenly with sauce, sprinkle with cheese and add your favorite toppings (turkey pepperoni! yum!)
