  • 1 shallot, finely diced
  • 1 tbls olive oil
  • ½ can pumpkin puree
  • ¼ heavy cream
  • 1 can chicken broth (14.5 oz)
  • 2 slices center cut bacon, cooked and chopped
  • ½ tsp salt
  1. Heat olive oil in a saucepan over medium-high heat. Add the onion and cook, stirring, 3 minutes or until soft.
  2. Stir in the pure pumpkin, chicken broth, cream, and salt and cook, stirring occasionally, 3 minutes or until soup simmers
  3. Ladle soup into 2 oz shot glasses and top with a sprinkle of bacon
