I just realized that of the 12 days of Foodie gifts, this is the 3rd in a row of some sort of infused alcohol. Oops! I must have “celebrating” on my mind, but I swear it wasn’t intentional! ha Don’t worry, you still have 9 more fantastic recipes coming your way, and they’re not all alcohol based.
Also, you may have noticed a gap in the 12 days of a Foodie’s Christmas, I am so sorry! I did not go MIA on you, I was having camera issues, but they are mostly resolved and I am back!
Back with booze. It is most definitely not summer here in Colorado, but if you sip this rum reallll slow and close your eyes reallll tight, you can almost imagine you’re laying on a beach somewhere. You know if you lay on a beach 2 pairs of socks and gloves on, because holy burr Denver!
This rum recipe also happens to be the main ingredient in my favorite cocktail recipe! You have read before about my love or mai tais and tropical drinks, well this drink is the next best thing to a week in the Caribbean (that may be a slight exaggeration).
But more on the cocktail in a sec, first we gotta make the rum. Which literally takes a second, ok maybe 5, but still, it’s quick! Ok, full disclosure, it takes 5 seconds, then about 3 weeks, because it needs a few weeks to infuse (more with the exaggerations I guess)
Here are the steps
- Grab a mason jar. Or 5.
- Fill it with pineapple chunks.
- Top with rum, making sure to cover pineapple completely.
- Let marinate in a cool dark spot for 2-3 weeks.
Now, it’s cocktail time!
- 1.5 oz pineapple infused rum
- 4 oz strawberry sparkling water
- splash of OJ
- You build this drink over ice, which means
- Put ice in a glass
- Add rum
- Add soda water
- Top with splash of OJ
- (do not shake)
