Cream Sauce Series

Well hello there!  How are ya?!

So you know what, I love a theme.  Years ago when I was planning weddings, (yes I used to be a full time wedding coordinator) I would always tell my brides to pick a theme.  I think it’s important.  First off, it gives you some direction.  I had a bride who really wanted a beach wedding.  But then she saw an adorable photo on Pinterest (of course! I feel so sorry for brides now a days with Pinterest, but that’s another story, and no I do LOVE Pinterest, it’s just a lot!  Overwhelming actually.  Wow, ramble much?!)

Where was I?  So this bride, she wanted a beach wedding, then she saw an adorable picture of a girl in a black lace dress and cowboy boots.  So she decided on that for her bridesmaids.  Ummm….  Beach. Black dresses. Cowboy boots.  Something doesn’t fit here.  So this is why, weddings, in life (home decor, etc) and in food I love a theme.  It gives you direction and helps you fit multiple pieces together.  When I’m hosting a get together, I’ll make it  Mexican night or an appetizers only party.  That way when I’m planning the menu, or decor (if I’m really getting fancy!  Which, let’s be serious, doesn’t happen a lot) I have some direction, taco bar great, margaritas, duh!  Guacamole with different mix-ins?  See how easy that was?

So where am I going with this?  Well I’ve been working on two themes for blog posts, I guess a better term for this forum is actually a “series”.

So the first series I’m going to introduce to you is a Cream Sauce series.

Three reason I’m starting with a cream sauce series.

One.  I love any and all things creamy.

Two.  Please see above.  Just kidding.  Sorta.  No really though, the second reason for cream sauce, is it’s so versatile.  You can do soooo much with a cream sauce.  So many recipes revolve around a good creamy sauce.

Three.  It’s probably one of the most fattening, calorie laden, bad for you foods.  And boy do I like a challenge.  Take on of the most notoriously unhealthy foods and make it surprisingly low in calories, and still keep the yum factor!  I also enjoy figuring out a way to enjoy foods I really love.

First some fun facts.  Well fun maybe a stretch, these are probably frightening facts.  These are the average calorie counts of your favorite cream sauces.

  • 1/4 Cup Alfredo- 224 calories
  • 1/4 Cup Beurre Blanc- 390 calories

Pretty bad huh?  Well the good news, my cream sauce?  1/4 Cup- 72 Calories!!  Wooo!!!

So how will this series work?  Well today, I’m going to introduce the basic sauce.  And the next posts will include variations on the sauce, as well as recipes for a dish using the sauce.

Basic Cream Sauce

Serves: 10
  • 1 Tbls Butter
  • 1 Tbls Crushed Garlic
  • 1 (8oz) Package Light Cream Cheese
  • 2 Cups Unsweetened Almond Milk
  • tsp each, Salt and Pepper
  1. On medium heat saute garlic in melted butter until it JUST starts to turn brown.  Be very careful not to burn!
  2. Add ½ cup almond milk.
  3. Add package of cream cheese to the sauce pan.  As cream cheese melts, whisk to incorporate, until all lumps are gone.
  4. After mixture is thoroughly incorporated, add rest of almond milk.  Stir to incorporate
  5. Cook on medium for approx 5 minutes until just boiling.
  6. Add Salt and Pepper
  7. Enjoy!
