Cooking for One Series

My husband is a really picky eater.  He’s getting better over the years, but there are still many many things he will not eat.

  1. Cheese
  2. Creamy stuff
  3. Mayo
  4. Sour cream
  5. Cheesy creamy stuff
  6. The best foods in life
  7. Fish or shellfish
  8. Fruit
  9. Dessert
  10. Avocados
  11. Tomatoes
  12. Italian food
  13. Leftovers
  14. One million and 12 other delicious items.

DSCF0478 This photo was taken about 7 years ago, we were living in Hawaii, he was in the Marines.  Obviously.  We were going to a ball.  That dress is still the most amazing one I’ve ever worn (ok maybe 2nd amazing, my wedding dress was pretty ok. 😉 )  And I have zero full length photos of it.  And frankly, it would not fit anymore.  All the sighs.

So!  Because he is a such a picky eater, I find myself cooking for myself a lot.  Especially for this blog, because there’s only so many times you want to read a version of chicken with raw onions and peppers wrapped in pita bread, topped with Sriracha.  Truuuust me on THAT.  So a significant portion of the recipes on this blog have been made for one little ole me.  There’s a few that I made large batches and enjoyed the leftovers, (like here and here) but no matter how good it is, you can only eat the leftovers so many days in a row.  So rarely do I make a large batch unless I’m having people over.  When I cook for  Eric a lot of what I do looks like thischicken and sweet potato chili

Meanwhile, I was chatting with a friend by the pool the other day, and she was complaining that it’s hard for her to cook for herself.  Either she can’t find a recipe for just one, or the math doesn’t really work to reduce the portion.  1/8 of a tomato?  1/4 can chicken broth?

So en light of this convo and the fact that it just so happens that I cook for myself quite often.  I decided to create a page for you singles, or you married to picky eaters, or you just looking for dinner or lunch ideas for one person.  On this page, you’ll find all recipes that are great for one person, or a recipe that is so easy to reduce to only prepare one portion.
