It’s grilling season you guys!
It also happened to be my very gorgeous husband’s birthday this last week!! I feel inclined to write a long sappy post about how much I love this guy, but he would, well, hate that. So I’ll just say I love you and Happy Birthday! In honor of his birthday, I have a very special “man” recipe. I only say man because, well I think of a man, and I think hearty steak. So darlin, this recipe is for you!
This recipe also happens to be a huge crowd pleaser (like if you’re one of those good wives that throw birthday parties for your husband?), and is incredibly easy to make for said crowd. So fire up that grill and let’s grill some meat! It’s summer alright!
First, the secret to a great steak, very aggressive seasoning. Like more than seems reasonable, because a lot falls/melts/cooks off. So a generous sprinkling of salt and pepper, and since this is for my husband, I add a sprinkling of cayenne and garlic powder for more of a blackened flavor. For a blackening spice recipe, check out this recipe or this one, hmmm, I’m sensing a trend?
Before you put your steak on the grill, make sure it is HOT! If it’s not super hot it will stick and turn sort of gray, and that never looks delicious! On a hot grill (or in a cast iron pan if you’re inside) you’ll cook your steak for 4-5 minutes each side, for a perfect medium rare.
Now on to the sauce! This sauce can easily be made ahead of time and multiplied easily for a large crowd (summer bbq’s anyone?) This sauce perfectly combines the flavors that classically enhance steak, horseradish and blue cheese. And with the base being the Greek Yogurt Sauce from this series, it comes together in seconds! So easy guys!
- ¼ cup Greek Yogurt Sauce
- 2 Tbls crumbled Blue Cheese
- 1 tsp jarred Horseradish
- Put ingredients in a bowl. Stir.
This is Lola’s, I wish my parents would share their steak with me face. It hardly ever works. Hardly.
And since it’s summer and berries are super fresh right now, have we discussed how I miss California and strawberries are super cheap and in season, like always? No? Topic for another day. Where was I? Oh yeah, you should go whip up this fabulous cocktail, one for while prepping, one for while cooking, one for while eating, and so on. Cheers! Just make sure you do the whole responsible thing and make the hubby drive 😉 If you’re not into this cocktail, or enjoy variety, there’s more where that came from!
